A tale of two giants.
After leaving the coffee world in 2017, having spent over 10 years as head roaster on a 25-kilo Diedrich commercial roaster, a giant had a void in his life. For the next 4 years, he wandered the land looking for a roaster that would suit his needs at home and still produce the kind of coffee that he demanded. Finally, he found the Aillio Bullet, drawn to its familiar capabilities but also the technical advancements and improvements over traditional gas drum roasters.
Once another giant caught wind of this acquisition, he proposed an intriguing idea. The other giant, being very impressed with the results of the Bullet roaster and also having this same idea tucked away in his giant head, agreed that it must happen. And so, with much fanfare and revelry and toasting of mead and devouring of hog leg, the two giants got together to decide what to call themselves.
Two Giants is among the many amazing coffee roasters in the thriving and well-caffeinated city of Greenville, SC. We call ourselves “niche” because it is not our ambition to appeal to a majority of coffee drinkers. We buy the greens we want, focusing on only a few selections at a time, and roast the type of coffee we ourselves want to drink. Hopefully, this interests at least enough people to cover the website fees.

ROASTER/DESIGNER
Craig has more than ten years of experience as Head Roaster for one of South Carolina’s oldest and largest specialty coffee roasters, which provided coffee to the likes of the Biltmore Estate, Table 301, and dozens of regional coffee shops and restaurants. Craig trained at Diedrich in Sandpoint, ID and Probat in Memphis, TN. In his previous role, he roasted on a Diedrich CR-25, Probat two-barrel sample roaster, and Sonofresco roaster.
Craig is a classical trumpet player and graduate of Yale School of Music, where his coffee obsession really took hold with daily visits to Willoughby’s and Koffee in New Haven. He teaches at several universities and performs with orchestras and brass ensembles. He also has an eye for portraiture and on the side-side paints and draws portraits. Art Haecker’s love affair with coffee came rather late in life. Like many people, Art wandered in ignorance in the swamp of frou-frou latte dessert-drinks before his palate evolved with an appreciation of niche coffee. While Art’s love of coffee was pure it was sadly indiscriminate, at least it was before encountering Craig King. Art was truly amazed at Craig’s unsettling knowledge of coffee. What was at first fear soon became curiosity as Craig guided Art down the path of single origin and optimal water density. Now he is a convert. Spreading the truth about quality roasts so that no one is forced to drink mediocre coffee!
